Day Eight of the Vegan Challenge
Yesterday I ate:
– Brunch at my aunt and uncles: 2 1/2 raisin scones (I made them substituting oil for the melted margarine and ground flaxseed mixed with water for the egg; they turned out perfect), mixed fresh fruit (blueberries, blackberries, raspberries, strawberries, kiwi, pineapple, watermelon), and a smoothie (orange juice + the above mentioned fresh fruit)
– 1/2 sheet of roasted nori seaweed stuffed with a couple spoonfuls of my quinoa/bean mixture
– Salad (romaine lettuce, radishes, tomatoes, cucumber, and hummus) and a few slices cantaloupe. I also had some granola smeared with almond butter on the side.
– Grilled cheese sandwich: 2 slices homemade bread with nutritional yeast cheese sauce, sliced mushroom/tomato/asparagus and spinach, grilled on the George Foreman. This was really delicious, although the cheese really oozed out of the sandwich while it was grilling. I think it needs to be thicker.
– 2 big bowls of air-popped popcorn topped with salt and a little spray of oil
So Sagan, I’m gone for a month and come back and you are on a Vegan challenge?!!!! Very cool! I’ve always wondered how hard it would be to stick to the vegan diet….
You are way more creative with vegan dishes than I’ve gotten haha, and you’re at it for a month. I guess for me it is quick and easy, no oven situation. The scones sound heavenly. I have bought vegan scones from Whole Foods, dipping it in a soy latte, yum, but never have I made my own. I will definitely be doing that when I get back home to a real kitchen!

I’m off the salt for a while on my popcorn. It’s not quite the same without it. 🙁

That sounds like a grilled cheese I’d like. I’ve heard of nutritional yeast cheese, but never cheese sauce. What’s it like?

Matt- Love. Popcorn. Cheese sauce is pretty good but it takes a little bit to get used to it.
Yummy eats you have there. It sounds like you are having fun; it doesn’t seem like a challenge at all. I think the hard part is when you are unaware that a product has non-vegan ingredients in it. That’s why – homemade/scratch is best.
