Healthy snack: zucchini chips
Zucchini chips are a really yummy, healthy treat for when you a) need your veggie fix, and b) are craving something salty and crunchy!
Since I had a lot of zucchini in my house last week (remember the zucchini that was the size of a small child?), I made piles of zucchini chips out of them. Some chips were eaten at the fruit/vegetable preserving workshop that I hosted (visit the Fruit Share website to view the recap of the workshop!), and the rest were enjoyed by the boyfriend before he left for his West Coast Trail hiking trip, so I made up another batch this weekend because my fridge seems to contain an awesome endless supply of zucchini. Mmmm!
This recipe uses a dehydrator. I expect you can make these in the oven at about 400 F, since I’ve made sweet potato chips that way, but I haven’t tried them in the oven yet so don’t quote me on that 🙂
In any case, if you happen to own a dehydrator, here’s the recipe:
Ingredients
– 1 large zucchini, sliced to about 1/4 inch thick
– Soy sauce (I used Braggs) or liquid smoke
– Grated parmesan cheese or nutritional yeast flakes
– Garlic powder, sea salt, black pepper to taste
Directions
1) Arrange zucchini slices on dehydrator tray.
2) Drizzle soy sauce/liquid smoke very lightly over the chips.
3) Sprinkle chips with parmesan/nutritional yeast flakes and spices.
4) Dehydrate for 10 – 20 hours.
5) Enjoy! Eat like a chip. A plate of these pairs well with a beer and a movie.

I could kick myself for getting rid of that dehydrator, Craigslist here I come! Thanks for a great idea on a healthy snack. Salty crunchy chips are my Achilles’s heel. If I can find one, I’ll have to try some sweet potatoes as well. This may start a whole new realm of crunchy but healthy goodness!
